These cranberries offer antioxidants, which are known for improving overall health. Plus, these are a great snack or breakfast on the go. This quick and easy recipe yields 6 small scones. Enjoy!

Cranberry Mini Scones

Ingredients
1 cup Almond Flour
2 tbsp Coconut Flour
1/4 cup Coconut Sugar or Cane Sugar (You may substitute Maple Syrup)
2 tsp Baking Powder
1 tsp Cinnamon
Pinch of Sea Salt
2 Eggs
1 1/2 tsp Vanilla Extract
1/2 cup Frozen Cranberries (lightly chopped)

Directions
Preheat oven to 375 degrees. Use either parchment paper or a Silpat to line baking sheet.
In mixing bowl, sift together the all dry ingredients:  Almond Flour, Coconut Flour, Sweetener, Baking Powder, Cinnamon and Sea Salt.
In another bowl whisk the Eggs and Vanilla Extract.
Slowly add in the whisked eggs to the dry ingredients with a spoon until a batter consistency forms.
Fold in the chopped cranberries.
Drop the batter in six equal size drops onto baking sheet.
Bake between 15-20 minutes and remove from oven when scones become lightly browned.
Transfer baked scones onto cooling rack.
