This is a simple breakfast to just warm up and take on the run! If you are anything like me and my family, we are usually on the go and out the door very fast each day. My girls love to warm these up and eat on the way to school or wherever we may be headed in the morning. The recipe is easy to follow and is satisfying to keep you from grabbing something not as healthy if you catch yourself feeling too hungry.

Cheesy Egg Muffins (Yields 6)

Ingredients
4 large eggs
2 tbsp full fat Greek yogurt
2 tbsp coconut flour
1/2 tsp baking powder
1/3 cup shredded Cheddar cheese
Kosher salt
Freshly ground black pepper

Directions
Preheat oven 375 degrees.
Mix egg, yogurt, dash of salt in a medium bowl.
Whisk these ingredients until well-blended.
Add coconut flour and baking powder to mixed batter until it becomes smooth.
Add the cheese and freshly ground black pepper and stir.
Bake for 20 minutes; rotating muffin pan halfway through.
